- 1 cup of rolled oats use gluten-free if necessary
- 1 tbsp ground flax seed
- 1/2 cup of natural peanut butter
- 2 medjool dates – pitted if the dates are dry, soak in water for twenty minutes to plump up
- A pinch of ground sea salt
- 1 cup of vegan (I use Enjoy Life branchocolate chips – melted
Grind the oats in a food processor until it resembles flour. Add the flax seed and process until blended. Add the peanut butter, dates, and sea salt and process until it forms a ball.
Melt the chocolate chips until the chocolate is thin and pourable.
Roll the dough into one inch balls and cover with the chocolate. Freeze for thirty minutes.
Keep refrigerated in an airtight container for up to one week.
