Peanut Butter and Jelly smoothie. A liquid lunch. You’ve got to try this.
Peanut butter and jelly. What’s not to like? Nutty, earthy, peanuts ground up into a creamy, slightly salty spread, then paired with a sweet, sticky, fruity jam. When I was a kid, that was my lunch on the daily, PB & J, sandwiched in between....wait for it...... Wonder Bread. OMG, how the times have changed!
Fast forward several decades later, and goodbye nutritionally void white bread, and hello whole grain bread; with little seeds and lots of fiber to hold my PB & J together. But today, I ran out of bread, so I did what any smoothie loving food blogger would do, I made a peanut butter and jelly smoothie. Necessity is the mother of invention.
There was another reason that I was motivated to create an unusual smoothie, and it was because it’s SMOOTHIE WEEK at Williams-Sonoma !

Like I said before, I ran out of bread, and that was a good thing. It was sort of like fate knocked on my door, because I was really racking my brain, trying to come up with a smoothie that was different, healthy, and oh so good. I was thinking so hard that it made me feel like I was back in school, which made me think of lunch (yeah, don’t judge, what was your favorite subject?), which made me think of my favorite sandwich, which made me hungry, but I didn’t have bread to make the sandwich, so the PB & J ultimately turned into this incredible smoothie. Thank you universe!
Smoothies are fantastic, they are the easiest and sneakiest way to get us to consume our vegetables and fruits. They are also usually grain free, which means that they’re low carb; for those of you monitoring your intake. Best of all, they go down so, well, smooth, because they taste so good!
Let’s talk ingredients. The peanut butter portion of this smoothie has a banana, almond milk, fresh pineapple, and peanut butter. There are so many healthy vitamins and minerals in this part, like potassium, calcium, vitamin C, and of course, protein. The jelly portion contains frozen strawberries and raspberries, spinach, and lemonade. An antioxidantpalooza! I just made that word up, but it works, so go with it. K?
I blended the peanut butter and jelly parts separately because I wanted to make it pretty. You can blend them together if you’re in a hurry, it just won’t look as nice. I also put ice in the mix to firm it up for the pictures. I prefer no ice because it dilutes the flavor. If you want your smoothie to be super thick and icy, then add ice, and maybe a little extra peanut butter and frozen strawberries to boost the flavor.

Do you have a good blender? You need one if you’re going to make a thick, creamy smoothie from frozen fruit and whole foods. Williams-Sonoma has a lot of options when it comes to blenders. They carry the Vitamix brand – my friends who have them rave (brag) about them. I really want one, but I can’t buy one until my current blender kicks it. They also carry Breville, another quality brand. Take a look at their website and browse their blenders.

Vegan Peanut Butter and Jelly Smoothie
Ingredients
- Peanut butter portion
- 1 banana
- 1 cup of almond milk unsweetened
- 1 cup of pineapple
- 1 tablespoon of peanut butter
- Jelly portion
- 1/2 cup organic frozen raspberries
- 1/2 cup organic frozen strawberries
- 3/4 cup organic lemonade
- 1 cup organic baby spinach leaves
Instructions
- Add the liquid then the solid ingredients. Blend the peanut butter mixture ingredients until smooth and creamy. Add the liquid then the solid ingredients. Blend the jelly mixture ingredients until smooth and creamy. Layer in glasses.
- You can mix all of this together if you don’t care to layer.
