Celebrate Cinco de Mayo with delicious and healthy Mexican food!
Is there anything more colorful and flavorful than Mexican food? Green, red, yellow, all the colors to make your plate look like a fiesta.
My husband and I don't need a reason to make Mexican food, we actually eat it at least twice a week. And I promise you that it's going to be made in my house on Thursday, because it's Cinco de Mayo, so what else would we eat?
Here are the plant-based Mexican foods that we're going to make for Cinco de Mayo:
Of course we're going to make margaritas. Thursday night, Mexican food. Muy Bien!
Pineapple Lime Margaritas

Guacamole is a must for any Mexican fiesta. I love this recipe because it gets a big boost from spinach. You'll love it, and it's the perfect way to sneak green leafy veggies into a picky eater's diet.
You don't have to make the guac in a molcajete, but if you have one, why not? Live a little.

Put the fun in the party with my zero cholesterol queso fundido. I promise you that the non-vegans in the house will devour this. It's that good.

If you're having a big party, you're going to need one more appetizer to feed the crowd. My spicy oil-free Mexican hummus has been a huge hit with my readers. They love it, I love it, and your body will love it.

If you're looking for a heavier appetizer, then these homemade black bean & spinach taquitos will do the trick. They're easy to make and even easier to eat.

Now it's time to get busy. With tacos. These beer battered "fish" tacos are another popular recipe on the blog. The first time I made them my husband made real fish tacos, and the fish eaters liked my vegan version better. Oh yeah!

Another favorite is this blue corn taco with fried potato recipe. There's so much texture and flavor going on in these beauties. If you've never had potatoes in tacos before then you're in for a treat.

I hope you left room for dessert, because my spicy vegan black bean brownies are to die for. They're so rich and chewy, with a little bite of cayenne pepper. Made with black beans so they're full of protein and super good for you. But don't worry, you'll never know they're in there.

Another fabulous dessert for Cinco de Mayo are my individual lime tarts with meringue. These little darlings are bursting with tangy lime and topped with a dollop of sweet meringue made with aquafaba. Delicious!

I'm coming to yours for Cinco de Mayo! That food and those Margaritas look amazing! It's all new to me as we don't celebrate anything like Cinco de Mayo in England. I've only ever heard of it since moving to Canada but I LOVE Mexican food so I am embracing it with open arms (and mouth)!
