Vegan Cobb Salad!!! Yes, you can still indulge in one of the best salads ever, it’s easy. We took our popular vegan chicken recipe, our tofu bacon recipe , and all of the vegetables that you’d find in a California Cobb salad, then whipped up a simple mustard vinaigrette and voila!

VEGETARIAN COBB SALAD
This was one of our favorite dinner salad recipes before we went vegan, and it took us a while to get it just right.
Before updating this recipe, we only used coconut bacon as one of the proteins, and that was it.
Lame.
Thankfully, we’re six years into this vegan thing and we’ve become seitan experts. So now, this plant-based cobb salad has chicken and the perfect version of vegan bacon.
The only thing missing is the egg, and because neither one of us liked hard-boiled eggs before, we're okay with that.
WHAT’S IN A COBB SALAD?
A classic Cobb Salad should have chopped romaine lettuce and watercress. You can also add iceberg and arugula.
We used arugula in place of watercress because our local grocer didn’t have any.
It should also have:
tomato
bacon
chicken breast
avocado
chives
Roquefort cheese
and a red-wine vinaigrette.
Oh, and hard-boiled eggs, which will never be in one of our salads.

HOW DO YOU MAKE A VEGAN COBB SALAD?
STEP ONE

Make a batch of our seitan chicken recipe
We make a double batch and freeze the extra, so we always have some on hand for pasta, tacos, or whatever you want to add vegan chicken to.
STEP TWO
Sear or grill the chicken breasts and make the tofu bacon
STEP THREE
Chop the lettuce, slice the tomatoes and avocado, and make the dressing.
STEP FOUR
Put the lettuce in a large bowl and arrange the remaining ingredients any way you want.
Toss with the dressing right before serving and sprinkle on the cheese.
WHAT KIND OF VEGAN CHEESE IS GOOD IN A COBB SALAD?
We love Treeline Cheese’s Green Peppercorn soft cheese in this. We crumble it and it’s a great substitute for the Roquefort cheese.
Feel free to use any bold flavored vegan cheese or leave it out.

Vegan California Cobb Salad
Ingredients
- 6 cups romaine lettuce chopped
- 3 cups arugula
- 1 1/2 cups cherry tomatoes sliced
- 2 avocados cubed
- 3 seitan chicken breasts sliced (See Note)
- 2 cups tofu bacon crumbled
- 1 red onion or shallot slivered
- 6 oz cashew cheese crumbled (See Note)
FOR THE DRESSING
- 1/2 cup white champagne vinegar
- 3 tbsp Dijon mustard
- 2 tsp pure maple syrup
- salt and pepper to taste
Instructions
- Make the seitan chicken and tofu bacon
- In a large bowl, toss the romaine lettuce and arugula until combined.
- Layer the tomatoes, sliced seitan chicken, crumbled tofu bacon, cubed avocado, slivered onion, and crumbled cheese on top of the lettuce.
- FOR THE DRESSING
- Whisk the 1/2 cup vinegar, 3 tbsp Dijon, 2 tsp maple syrup, and salt and pepper to taste until fully combined. Taste and adjust as desired.
- Pour evenly over the salad and toss until combined.
- Enjoy!
