My Mother's Day Menu
To celebrate Mother's day right I've created a feast designed around my Mom's (Linda's) favorite flavors and dishes. These include things like fresh fruit, lots of spices, and tons of greens!
Beet-love Super Juice
Linda is a huge fan of fresh juice and is also a gigantic fan of beets. I remember being a kid and sitting down to a meal with a beet salad on the side and wanting to die! I hated beets as a child, but as I become more and more similar to my wonderful mother I have learned to adore these sweet bright red tubers and now love to incorporate them into my weekly diet!
Cranberry-Blueberry Muffins
Next up we have some AMAZING cranberry-blueberry muffins! I can't wait to dive into these and I know Linda will be excited too because I've never met another person on the planet who eats as many berries as she does. And who can blame her! They're an extremely versatile ingredient and are packed with antioxidants to help her recover from those killer endurance training runs.
Veggie-Herb Frittata
To add a savory component to our Mother's Day brunch, I'm adding a vegan-egg based frittata filled with some of Linda's favorite ingredients like, mushrooms, tons of spinach, olives and tomatoes!
Truffle-Parmesan Breakfast Potatoes
As a side dish, we're throwing together some super delicious and savory truffle-parmesan breakfast potatoes. The flavor in these potatoes is so incredible, it'll elevate the meal to feel like the perfectly elegant Mother's Day brunch everyone's mom deserves!

Dairy cow mothers have their babies taken away from them hours after birth and are used like machines throughout their short lives. Mother's Day never is a big deal around here. For years, I lived away from my mom and mother-in-law and the hubby works every MD. I'll be sharing this with my kids (now that they are a little older) and hopefully they'll get the hint 🙂

We don't make a huge deal out of Mother's Day either. Alex loves making brunch for me, then I usually plant my flower boxes and garden beds. That blanket looks awesome!
